The ginger is subtle enough that it doesn't overpower, but the real star is how tender each bite is—it practically pulls apart. Sweet and salty balance is spot on, and I've already grabbed a second bag to keep at my desk.
I wasn't expecting the ginger to come through so clearly, but it gives the sweetness a nice warm edge that sets this apart from typical teriyaki. The bites are genuinely tender without being mushy, and knowing there are no preservatives makes the whole bag disappear faster than it should.
Finally, a jerky that's actually tender instead of chewing on leather for ten minutes. The sweet and umami balance is spot-on, and knowing it's gluten-free without preservatives makes it easy to snack on guilt-free.
